Bryan is a small business partner of the renowned Salt & Time Butcher shop in Austin Texas. Bryan is a trained and experienced Journeyman Butcher, with 15 years in retail and products, as well as 15+ years in the foodservice industry. Bryan’s career highlights include over 40+ appearances across the US demonstrating and educating the public and chefs alike.

Bryan likes to focus on the art of seam butchery, dry aging, curing, and fabrication of all types of domestic and wild animals. In 2017 he was named “The best Butcher in Texas” by the beef loving Texans part of the Texas Beef council. Bryan is also one of 8 butchers ever to represent the USA in an ongoing international competition called the “Worlds Butchers Challenge”. Bryan is a two-time competitor amongst the best butchers in the world. His sausage was named the best Beef Sausage at the 2022 competition. Bryan is also a freelance consultant.

He has consulted as technical adviser on the TV competition show “The Butcher”. He’s also consulted with many authors on their own books, like Aaron Franklin’s-Steak, and Butchery for Dummies. He and Salt & Time have also been featured in several books, radio, podcast, blogs, and magazines themselves. He brings all this experience to the block with every client he speaks with.

Bryan excels at understanding the unique challenges faced by operators in many fields no matter how unorthodox. Bryan is a pragmatic problem solved who likes to help other’s get to their goals.
