Dom Tolomeo

MASTER PIZZAIOLO

Domenico “Mimmo” Tolomeo is a first-generation Italian American who comes from a long line of master bread makers from the south of Italy. When he was 13, Mimmo began his career working in local Italian salumerias on Long Island and thus began his love affair with Italian cuisine. In the salumerias, he was taught many old-world culinary arts from making mozzarella to preparing fresh sausage and cooking many American-Italian dishes.

At 32, Mimmo decided to make a career change and began studying the art of pizza making. He trained under award-winning Master Pizzaioli Roberto Caporuscio and Giorgia Caporuscio. From them, Mimmo received his certification from the Associazione Pizzaiouli Napoletani, the governing body of pizza makers in Italy. Within his first year and under Roberto’s guidance, Mimmo received the 2019 Caputo Rising Star Award in the Caputo Cup and was named Capo Pizzaiolo at the world-renowned Keste Pizza e Vino. From there Mimmo has gone on to be the Head Pizzaiolo behind Zazzy’s Pizza which was named one of the top 30 pizzas in NYC by Thrillist and has been featured in many publications such as The New York Times, Eater, NBC, and Page Six!.
